Lost Recipes: A Journey into Thailand’s Culinary Memory

The Banyan Tree at Taj Holiday Village Resort & Spa, Goa, where Thai cuisine takes a more evocative turn with Lost Recipes, a culinary journey into dishes, flavours and traditions that have endured beyond the contemporary table. Curated by Chef Lily, the experience is an intimate expression of Thai cooking authentic, aromatic and rooted in regional heritage.

 

The menu brings together recipes chosen for their character and sense of place. Gaeng Bumbai, a fragrant, richly spiced curry, reveals the depth of Thailand’s layered spice traditions, while Gai Tod Chao Suan, a beautifully seasoned Thai fried chicken, celebrates the cuisine’s affinity for crisp textures and bold, balanced flavours. Together, they offer a glimpse into a repertoire that is less familiar, yet distinctly Thai.

 

The journey continues with beverages that echo the same spirit of discovery. Fenegria, with its aromatic, herbal notes, and Kyuri Maho, a fresh, cucumber-led creation, complement the food while bringing a contemporary lens to traditional Thai flavours.

 

For Chef Lily, authenticity begins with the ingredient. Many of the herbs used across the menu are grown within the resort itself, lending the experience an immediate sense of freshness and provenance.

 

Speaking about the philosophy behind the promotion, Mr Javed Deshmukh said, “Lost Recipes is our way of bringing guests closer to the authenticity of Thai cuisine. It is about respecting the original flavours, techniques and ingredients rather than simply recreating familiar dishes. Growing many of the herbs we use at the resort allows us to take that philosophy a step further, bringing freshness and a sense of provenance to every plate.”

 

Lost Recipes is an invitation to discover another side of Thailand through recipes that carry memory, place and the richness of a cuisine shaped over generations.
